1952, when Gasparre Polese decided to devote himself exclusively to the production of\u00a0<strong>artisanal gelato<\/strong>\u00a0and founded this gelateria, he began using\u00a0<strong>simple and genuine ingredients<\/strong>, using\u00a0<strong>fresh and seasonal raw ingredients.<\/strong><\/p><p>\u00a0<\/p><p>Even today this is\u00a0<strong>the strength of our gelateria.<\/strong><\/p><p>\u00a0<\/p><p>We use\u00a0<strong>fresh eggs<\/strong>\u00a0from hens raised on the ground in the area of\u00a0<strong>Bibano di Godega<\/strong>, sucrose or brown sugar (with the exception of the so-called light flavours where stevia and sweeteners are used) and we rely on fresh or long milk coming from Bavarian breeding.<\/p><p>\u00a0<\/p><p>We try as much as possible to enhance the\u00a0<strong>local products<\/strong>\u00a0of the surrounding area, such as\u00a0<strong>ricotta di Cavolano<\/strong>,\u00a0<strong>mandorlato of Cologna Veneta<\/strong>,\u00a0<strong>Figo moro di Caneva<\/strong>\u00a0in addition to the eggs as above mentioned.<\/p><p>\u00a0<\/p><p>One of our goals is to give our customers the best and there is no Country like Italy that is able to provide\u00a0<strong>excellent raw ingredients<\/strong>: this is why we use\u00a0<strong>Sicilian pistachios from Bronte, hazelnuts from Piedmont, almonds from Val di Noto, Emilian Chestnuts<\/strong>\u00a0and other national raw products.<\/p><p>\u00a0<\/p><p><strong>Fresh fruit is one of our advantages.<\/strong>\u00a0Minimum a couple of times per week, through qualified trustworthy people or ourselves, we go to the\u00a0<strong>fruit and vegetable market of Treviso<\/strong>\u00a0buying various types of fruit, paying attention to seasonality, quality and also the origin of the fruit itself.
